Stuffed pumpkin with quinoa and spicy minced meat

ingredients

  • 2butternut squashes
  • 80 gquinoa
  • 300 gminced beef
  • 1shallot, finely chopped
  • 2garlic clove, crushed
  • ½ Tinof tomatoes in pieces
  • 2 tspcumin, ground
  • 1 tspcoriander, ground
  • 1 tspcayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil

To serve

  • Natural yoghurt
  • Fresh chilli
  • Fresh cilantro

Preparation
MEAT

1Preheat oven to 200° C circulating air.

2Cut pumpkins in half lengthwise, remove seeds. Cut the flesh into a lattice

3Cover pumpkins with aluminium foil and bake on a baking tray for 50 minutes.

4In the meantime, cook the quinoa in boiling salted water until soft and pour it off.

5Heat olive oil in a pan, add shallot, garlic and minced meat add the meat and fry it all around.

6Add the tomato pieces and spices and continue to fry for about 1 minute. Season with salt and pepper.

7Remove the pumpkins from the oven. Minced meat with quinoa mix and distribute on the pumpkin halves.

8Cover the pumpkins with aluminium foil again and bake for another 25 minutes.

9Serve with natural yoghurt, fresh chilli and coriander.
